Juicy, fail-proof sous vide boneless skinless chicken thighs with a golden sear—perfect for easy weeknight meals or meal prepping.
Ingredients
4 boneless, skinless chicken thighs
1 tsp kosher salt
1/2 tsp freshly ground black pepper
2 garlic cloves, minced
1 tsp fresh thyme leaves
1 tbsp olive oil (for searing)
Instructions
1. Season chicken thighs with salt, pepper, garlic, and thyme.
2. Vacuum-seal or use water displacement method in a zip-top bag.
3. Preheat sous vide bath to 155°F (68°C).
4. Submerge sealed chicken and cook for 2 hours.
5. Remove thighs and pat them completely dry.
6. Heat olive oil in a skillet over medium-high heat.
7. Sear each side for 1–2 minutes until browned.
8. Rest for 3–5 minutes, then slice and serve.
Notes
You can cook for up to 4 hours without loss of quality.
Resting after searing ensures juicier meat.
Serve over grains, salads, or roasted vegetables.
